Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, beaten egg, garlic, onion powder, salt, and pepper. Mix until well combined.

  • 3.

    Fold in the diced bell peppers and zucchini for added fiber and nutrients.

  • 4.

    Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

  • 5.

    Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.

  • 6.

    Serve with marinara sauce on top or on the side.
