Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.

Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.

Bake the meatballs for 20 minutes or until cooked through and golden brown.

While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.

Once the meatballs are done, add them to the marinara sauce and let them simmer for 5 minutes.
7.
Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
8.
Assemble the tacos by placing meatballs on the tortillas, topping with black beans, spinach, and salsa.

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg
6.
2 cloves garlic, minced
7.
1 teaspoon onion powder
8.
1 teaspoon Italian seasoning
9.
Salt and pepper to taste
10.
1 cup marinara sauce (low-sugar)
11.
4 corn tortillas
12.
1 cup black beans (canned, rinsed and drained)
13.
1 cup fresh spinach (optional, for added fiber)
14.
1/2 cup salsa (low-sugar)
