Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, spinach, green peppers, tomatoes, garlic powder, onion powder, salt, and pepper. Mix until well combined.

  • 3.

    Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

  • 4.

    Bake for 20 minutes or until cooked through and golden brown.

  • 5.

    While the meatballs are baking, heat the pizza sauce in a small saucepan over medium heat.

  • 6.

    Warm the low-carb tortillas in a separate pan or microwave.

  • 7.

    Serve the meatballs on the tortillas, topped with pizza sauce, and enjoy with steamed broccoli on the side.

    1/2 cup diced green peppers

    1/2 cup diced tomatoes

  • 8.

    1 tsp garlic powder

  • 9.

    1 tsp onion powder

  • 10.

    Salt and pepper to taste

  • 11.

    1 cup pizza sauce (low sugar)

  • 12.

    4 low-carb tortillas

  • 13.

    6 oz broccoli (steamed)
