Instructions

  • 1.

    In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sautéing until translucent (about 5 minutes).

  • 2.

    Add the chicken breast to the pot and cook until browned on all sides (about 5-7 minutes).

  • 3.

    Stir in the green chilies, corn, white beans, chicken broth, cumin, chili powder, oregano, salt, and pepper.

  • 4.

    Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

  • 5.

    Remove the chicken, shred it with two forks, and return it to the pot. If using, stir in the spinach and cook for an additional 5 minutes until wilted.

    Taste and adjust seasoning as needed before serving.
