Instructions

1. Toast the whole grain sourdough bread until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs into a bowl, add salt and pepper, and whisk until well combined.

3. Heat olive oil in a non-stick skillet over medium heat. Pour in the eggs and scramble gently until cooked through (about 3-4 minutes).

4. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

5. Spread the mashed avocado evenly over the toasted bread slices.

6. Top each slice with the scrambled eggs and garnish with fresh herbs if desired.
