An egg scramble with 2 eggs cup of spinach and sun dried tomatoes. Paired with one slice of Ezekiel whole wheat bread 2oz avocado mash and 1oz sharp white cheddar cheese (grated). This was a really filling breakfast!

Instructions

  • 1.

    1. In a medium bowl, whisk the eggs and season with salt and pepper.

  • 2.

    2. Heat a non-stick skillet over medium heat and spray with olive oil if desired.

  • 3.

    3. Add the chopped spinach and sun-dried tomatoes to the skillet, cooking for 2-3 minutes until the spinach wilts.

  • 4.

    4. Pour the whisked eggs into the skillet, stirring gently to combine with the vegetables. Cook for 3-4 minutes until the eggs are set.

  • 5.

    5. While the eggs are cooking, toast the Ezekiel bread slices.

  • 6.

    6. Spread the mashed avocado evenly on each slice of toast.

  • 7.

    7. Once the eggs are cooked, top each slice of toast with the egg scramble and sprinkle with grated cheddar cheese.
