Instructions

  • 1.

    In a non-stick skillet, spray a little olive oil and heat over medium heat.

  • 2.

    Add the chopped onion and sauté for 2-3 minutes until translucent.

  • 3.

    Add the thawed hash browns and cook until golden brown, about 5 minutes.

  • 4.

    In a bowl, whisk the eggs and season with salt and pepper.

  • 5.

    Pour the eggs into the skillet and gently scramble with the hash browns and onions until cooked through, about 3-4 minutes.

  • 6.

    Remove from heat and stir in the roasted red peppers and spinach until wilted.

  • 7.

    Spread the mashed avocado on each spinach wrap, then layer the egg mixture and sprinkle with cheese.

  • 8.

    Roll the wraps tightly and slice in half to serve.
