Instructions

    1. Toast the wholemeal sourdough bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

  • 3.

    3. In a separate bowl, whisk the eggs until well combined. Season with salt and pepper.

    4. Heat a non-stick skillet over medium heat and lightly spray with olive oil (if using). Pour in the eggs and scramble until cooked to your liking (about 3-4 minutes).

    5. Spread the mashed avocado evenly over the toasted bread slices.

    6. Top each slice with the scrambled eggs. Optionally, add fresh spinach on top for extra fiber.
