Instructions

1. In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 3-4 minutes.

2. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.

3. In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet and scramble with the spinach and onions until fully cooked, about 3-4 minutes.

4. While the eggs are cooking, toast the English muffins until golden brown.

5. Once the eggs are cooked, remove from heat and stir in crumbled feta cheese.
6.
6. Assemble the dish by placing the egg mixture on the toasted English muffins and topping with sliced avocado.
