Instructions
1.
1. Toast the Ezekiel bread slices until golden brown (about 3-4 minutes).

2. In a non-stick skillet, add a little water and crack the eggs into the skillet. Cook over medium heat until the whites are set and yolks are cooked to your liking (about 4-5 minutes).

3. While the eggs are cooking, spread 1/4 cup of guacamole on each slice of toasted bread.

4. Once the eggs are cooked, place one egg on top of each slice of guacamole-covered bread.

5. Sprinkle shredded low-fat cheese on top of the eggs.
6.
6. Serve with apple slices and a handful of mixed nuts on the side.
