Instructions

1. Start by boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in cold water.

2. While the eggs are boiling, toast the whole grain crisp bread until golden brown.

3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

4. Spread a wedge of Laughing Cow cheese on each slice of toasted crisp bread.

5. Top each slice with a generous amount of mashed avocado.

6. Peel the boiled eggs, slice them, and arrange them on top of the avocado.

7. Sprinkle chia seeds and everything bagel seasoning over the top for added flavor and nutrition.
