Instructions

1. Start by toasting the whole grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

3. Heat a non-stick skillet over medium heat and add a small amount of cooking spray or olive oil.

4. Pour the eggs into the skillet and scramble them gently until fully cooked (about 3-4 minutes).

5. In a separate bowl, mash the avocados with lemon juice, salt, and pepper until creamy.

6. If using spinach, sauté it in the same skillet for 1-2 minutes until wilted.

7. Assemble the toast by spreading the mashed avocado on each slice of bread, topping with scrambled eggs, and adding sautéed spinach if desired.
