Instructions

    1. Toast the multigrain English muffins until golden brown (about 3-4 minutes).

    2. While the muffins are toasting, heat a non-stick skillet over medium heat and lightly coat with olive oil.

    3. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, scrambled, or poached) for about 4-5 minutes.

    4. If using avocado, mash it in a bowl and season with salt and pepper.

    5. Assemble the toast: Spread mashed avocado (if using) on each muffin half, layer with a slice of cheese, add tomato slices, and top with cooked eggs.

    6. Finish with fresh baby spinach and a drizzle of olive oil. Season with additional salt and pepper if desired.
