Instructions

    1. Heat a non-stick skillet over medium heat and add a small amount of olive oil or cooking spray.

    2. Sauté the diced onion and bell pepper for about 3-4 minutes until softened.

    3. Add the corn and spinach, cooking for another 2-3 minutes until the spinach wilts.

    4. In a bowl, whisk the eggs with salt and pepper, then pour them into the skillet. Stir gently to scramble until fully cooked, about 3-4 minutes.

    5. While the eggs are cooking, toast the whole grain bread slices.
