Instructions

1. In a non-stick skillet, sauté the spinach over medium heat until wilted (about 2 minutes).

2. Add the egg whites to the skillet, stirring gently until cooked through (about 3-4 minutes). Season with salt and pepper.

3. While the eggs are cooking, toast the Ezekiel wraps until golden brown.

4. Assemble the toast by spreading the cooked egg whites and spinach mixture on the toasted wraps.
