Instructions
1.
1. Start by boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in cold water and peel.

2. While the eggs are cooking, toast the whole grain bread until golden brown.

3. In a bowl, mash the ripe avocados with a fork. Season with salt, pepper, and a sprinkle of paprika for flavor.

4. Spread the mashed avocado evenly on each slice of toasted bread.

5. Slice the hard-boiled eggs and arrange them on top of the avocado spread.

6. Sprinkle crumbled feta cheese over the eggs and finish with a dash of paprika.

7. If using, add fresh spinach on the side or on top for added fiber.
