Fantastic breakfast! The lean protein from the eggs combined with the fiber from the peppers and onions is a great way to start your day. And kudos for making your own sourdough bread!!

Instructions

  • 1.

    1. Start by toasting the sourdough bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. In a non-stick skillet, spray a little olive oil and sauté the diced onions and bell peppers over medium heat for about 3-4 minutes until softened.

  • 3.

    3. In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet with the vegetables and scramble until cooked through (about 3-4 minutes).

    4. While the eggs are cooking, mash the avocados in a bowl and season with salt and pepper.

  • 5.

    5. Once the eggs are done, remove from heat and sprinkle with Parmesan cheese if using.

  • 6.

    6. Spread the mashed avocado on each slice of toasted bread, top with the egg scramble, and garnish with fresh herbs.

    4 slices of whole grain sourdough bread

    2 ripe avocados

    8 large eggs

    1 cup mixed bell peppers (red, yellow, green), diced

  • 5.

    1 small onion, diced

  • 6.

    1/4 cup grated Parmesan cheese (optional)

  • 7.

    Salt and pepper to taste

  • 8.

    Olive oil spray or a small amount of olive oil

  • 9.

    Fresh herbs (like cilantro or parsley) for garnish
