Instructions

1. Heat olive oil in a non-stick skillet over medium heat.

2. Add chopped spinach and sauté for 2-3 minutes until wilted.

3. In a bowl, whisk the eggs with salt and pepper, then pour into the skillet with spinach.

4. Scramble the eggs until fully cooked, about 3-4 minutes.

5. While the eggs are cooking, toast the whole wheat flatbreads in a toaster or on a skillet until warm.

6. Assemble by placing the scrambled eggs on the flatbreads, topping with avocado slices, and serving with fresh raspberries on the side.
