Healthy Avocado Toast Recipe with Egg

Instructions
1.
1. Toast the sourdough bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat a non-stick skillet over medium heat and add the chopped onion. Sauté for 2-3 minutes until translucent.

3. Add the steamed broccoli to the skillet and cook for another 2 minutes.

4. Crack the eggs into the skillet, season with salt and pepper, and scramble until fully cooked (about 3-4 minutes).

5. In a bowl, mash the avocados and season with salt and pepper.

6. Spread the mashed avocado evenly on each slice of toasted bread.

7. Top the avocado toast with the scrambled egg mixture and a dollop of cottage cheese.
8.
8. Finish with slices of smoked salmon on top and garnish with fresh herbs if desired.
