Inspired by my breakfast yesterday sourdough toast broccoli onion n eggs with a little cottage cheese and some smoked salmon on top

Congratulations on hitting your breakfast goal for this week Zoe Love to see that you took some inspo from your previous breakfast I hope it was just as tasty!!

Instructions

  • 1.

    1. Toast the sourdough bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. While the bread is toasting, heat a non-stick skillet over medium heat and add the chopped onion. Sauté for 2-3 minutes until translucent.

  • 3.

    3. Add the steamed broccoli to the skillet and cook for another 2 minutes.

  • 4.

    4. Crack the eggs into the skillet, season with salt and pepper, and scramble until fully cooked (about 3-4 minutes).

  • 5.

    5. In a bowl, mash the avocados and season with salt and pepper.

  • 6.

    6. Spread the mashed avocado evenly on each slice of toasted bread.

  • 7.

    7. Top the avocado toast with the scrambled egg mixture and a dollop of cottage cheese.

  • 8.

    8. Finish with slices of smoked salmon on top and garnish with fresh herbs if desired.

    4 large eggs

    1 cup steamed broccoli, chopped

    1/2 small onion, finely chopped

    1/2 cup low-fat cottage cheese

  • 7.

    4 oz smoked salmon

  • 8.

    Salt and pepper to taste

    Fresh herbs (optional, for garnish)
