Instructions
1.
1. Begin by boiling the eggs: Place the eggs in a pot, cover with water, and bring to a boil. Once boiling, reduce heat and simmer for 6-7 minutes for soft-boiled eggs. Remove and cool in ice water.

2. While the eggs are cooking, toast the whole grain bread slices until golden brown.

3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork, adding salt, black pepper, and a squeeze of lemon juice for flavor.

4. Once the eggs are cool, peel them and slice in half.

5. Spread the mashed avocado evenly on the toasted bread slices.

6. Top each slice with smoked salmon and a halved egg. Add fresh spinach if desired.

7. Season with additional salt and pepper to taste, and serve immediately.
