Instructions

1. Start by heating a non-stick skillet over medium heat. Add the butter or olive oil.

2. Sauté the onions and bell peppers for about 3-4 minutes until they soften.

3. Add the cauliflower rice and cook for another 2-3 minutes until heated through.

4. In a separate bowl, whisk together the eggs and egg whites. Pour them into the skillet with the veggies.

5. Cook the egg mixture, stirring gently, until the eggs are fully cooked (about 3-4 minutes). Season with salt and pepper.

6. While the eggs are cooking, toast the slices of good seed bread.

7. Mash the avocados in a bowl and season with salt and pepper.

8. Spread the mashed avocado on the toasted bread, then top with the egg and veggie mixture.

9. Garnish with fresh herbs if desired and serve immediately.
