Instructions
1.
1. Start by preparing the vegetables. In a non-stick skillet, spray a little olive oil and sauté the onions over medium heat for about 2 minutes until they start to soften.

2. Add the chopped broccoli and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are tender.

3. In a bowl, whisk together the eggs and egg whites. Pour the mixture over the sautéed vegetables in the skillet. Cook, stirring gently, until the eggs are fully cooked, about 3-4 minutes.

4. While the egg mixture is cooking, toast the whole wheat bread slices until golden brown.

5. Mash the avocado in a bowl and season with salt and pepper.

6. To serve, spread the mashed avocado on the toasted bread, top with the vegetable and egg mixture, and enjoy!
