Your breakfast looks just right Marianna! The egg is a great source of lean protein and the whole wheat toast adds a bit of fiber to your meal which is a bonus. Have a fantastic weekend and lets keep this healthy routine going strong!

Instructions

  • 1.

    1. Start by boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, reduce heat and simmer for 9-12 minutes. Remove and cool in cold water.

    2. While the eggs are boiling, toast the whole grain bread until golden brown.

  • 3.

    3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

    4. Once the eggs are cool, peel them and separate the yolks from the whites. Slice the boiled egg whites and set aside.

    5. Spread the mashed avocado evenly on each slice of toast.

    6. Top with sliced egg whites and crumbled yolks. Add any optional toppings like cherry tomatoes or spinach.
