Instructions
1.
Preheat your air fryer to 375°F (190°C).
2.
Toss the halved Brussels sprouts with a light spray of olive oil, salt, and pepper. Air fry for 10-12 minutes until crispy.
3.
While the Brussels sprouts are cooking, mash the avocados in a bowl and season with salt and pepper.
4.
In a non-stick skillet, cook the egg whites over medium heat until set, about 3-4 minutes.
5.
Toast the whole grain super bread until golden brown.
6.
Assemble the toast: spread a generous layer of mashed avocado on each slice, top with cooked egg whites, and add the canned salmon.
7.
Serve with the roasted Brussels sprouts on the side.
