Instructions
1.
1. Start by cooking the turkey bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and set aside.

2. In the same skillet, scramble the eggs until fully cooked, about 3-4 minutes. Season with salt and pepper.

3. While the eggs are cooking, toast the gluten-free bread slices until golden brown.

4. Mash the ripe avocados in a bowl and season with salt and pepper.

5. Spread the mashed avocado evenly on each slice of toast.

6. Top each toast with scrambled eggs, a slice of turkey bacon, and a sprinkle of shredded cheese.

7. If desired, add fresh spinach or arugula on top for extra fiber and nutrients.
