Instructions

1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. In a skillet, sauté the diced onion, red bell pepper, and mushrooms over medium heat for about 5 minutes until softened.

3. Add the spinach and cook until wilted, about 2 minutes.

4. In a separate bowl, whisk together the eggs and egg whites, then pour into the skillet with the vegetables. Cook until scrambled and fully cooked, about 3-4 minutes.

5. Mash the avocados in a bowl and season with salt and pepper.

6. Spread the mashed avocado on each slice of toast, then top with the egg and vegetable scramble.

7. Serve with fresh strawberries on the side.
