Instructions

Preheat your oven to 400°F (200°C).

Slice the sweet potatoes lengthwise into 1/2-inch thick slices.

Place the sweet potato slices on a baking sheet and spray lightly with olive oil (if using).

Bake for 15-20 minutes, flipping halfway through, until tender and slightly crispy.

While the sweet potatoes are baking, scramble the eggs in a non-stick skillet over medium heat, seasoning with salt, pepper, and dill. Cook until just set, about 3-4 minutes.

In a bowl, mash the avocado with a fork and season with salt and pepper.
