Instructions

1. Start by toasting the whole wheat bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

3. Heat a non-stick skillet over medium heat and add a small amount of olive oil if desired.

4. Pour the whisked eggs into the skillet and cook for about 3-4 minutes, gently stirring until they are scrambled and cooked through.

5. In a separate bowl, mash the ripe avocados with a fork and season with salt, pepper, and chopped herbs.

6. Once the toast is ready, spread the mashed avocado evenly on each slice.

7. Top each slice with the scrambled eggs and a slice of mozzarella cheese if using.

8. Garnish with additional herbs and serve immediately.
