Instructions

    1. Toast the whole grain bread slices until golden brown (about 3-5 minutes).

    2. While the bread is toasting, hard-boil the eggs (about 8-10 minutes in boiling water).

    3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

  • 4.

    4. Mash the avocado with a fork, adding salt, pepper, and optional lemon juice to taste.

    5. Once the eggs are done, peel and slice them.

    6. Spread the mashed avocado evenly on each slice of toast.

    7. Top each toast with slices of hard-boiled egg and sprinkle with sliced almonds.
