Instructions

1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs into a bowl, whisk them, and season with salt and pepper.

3. In a non-stick skillet, scramble the eggs over medium heat until fully cooked (about 3-4 minutes).

4. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and add a pinch of salt and a squeeze of lemon juice.

5. Spread the mashed avocado evenly on each slice of toast.

6. Top each toast with scrambled eggs and a dollop of cottage cheese.

7. Garnish with red pepper flakes or fresh herbs if desired.
