Instructions

  • 1.

    Toast the whole wheat bread slices until golden brown (about 3-4 minutes).

    In a skillet, heat a small amount of oil over medium heat. Add the crumbled tofu, nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.

    Add the chopped spinach to the skillet and cook for an additional 2 minutes until wilted.

  • 4.

    Mash the ripe avocados in a bowl and season with salt and pepper.

  • 5.

    Spread the mashed avocado evenly on each slice of toasted bread.

  • 6.

    Top each slice with the vegan scrambled eggs and sprinkle with everything bagel seasoning.

    Serve immediately and enjoy your healthy avocado toast!
