Spinach and mushroom omelette. Was good. End up more like a scramble. I did put a little hot sauce on it.

Amazing breakfast! The hot sauce is a great way to add flavor without adding extra calories Just remember to keep an eye on the sodium content in sauces as some can be quite high! I also see those slices of whole grain bread great call

Instructions

  • 1.

    1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 3-4 minutes until softened.

    3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.

  • 4.

    4. In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet and scramble with the vegetables until fully cooked (about 3-4 minutes).

    5. While the eggs are cooking, mash the avocados in a bowl and season with salt and pepper.

  • 6.

    6. Spread the mashed avocado on the toasted bread, then top with the spinach and mushroom scramble.

    7. Drizzle with hot sauce if desired and serve immediately.
