“Amazing breakfast! The hot sauce is a great way to add flavor without adding extra calories Just remember to keep an eye on the sodium content in sauces as some can be quite high! I also see those slices of whole grain bread great call”
Instructions
1.
1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 3-4 minutes until softened.

3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.

4. In a bowl, whisk the eggs with salt and pepper. Pour the eggs into the skillet and scramble with the vegetables until fully cooked (about 3-4 minutes).

5. While the eggs are cooking, mash the avocados in a bowl and season with salt and pepper.

6. Spread the mashed avocado on the toasted bread, then top with the spinach and mushroom scramble.

7. Drizzle with hot sauce if desired and serve immediately.
