Instructions
1.
1. Start by hard boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in ice water.

2. While the eggs are cooking, toast the whole grain bread until golden brown.

3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper to taste.

4. Spread 1 tablespoon of Laughing Cow cheese on each slice of toast.

5. Top each toast with a generous amount of mashed avocado.
6.
6. Slice the hard-boiled eggs and arrange them on top of the avocado toast.
7.
7. Serve with a side of mixed berries for a refreshing touch.
