Instructions

1. Toast the whole grain or seed-based bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs and egg whites into a bowl, whisking them together with a pinch of salt and pepper.

3. Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and cooked through (about 3-4 minutes).

4. In a separate bowl, mash the ripe avocados with a fork and season with salt and pepper.

5. Once the toast is ready, spread a generous layer of mashed avocado on each slice.
