Instructions

1. Toast the sourdough bread slices until golden brown (about 3-4 minutes).

2. In a non-stick skillet, cook the egg whites over medium heat until set, about 3-4 minutes. Season with salt and pepper.

3. In a bowl, mash the avocado and mix in a pinch of salt and pepper.

4. Spread the goat cheese on the toasted sourdough.

5. Layer the mashed avocado on top of the goat cheese.

6. In a separate bowl, combine diced tomatoes, chopped lettuce, olive oil, salt, and pepper to make the bruschetta topping.

7. Spoon the bruschetta mixture over the avocado toast.

8. Serve with a side of mixed berries.
