Instructions

  • 1.

    In a skillet, heat a small amount of olive oil spray over medium heat.

    Add the chopped kale and sundried tomatoes, sautéing for about 3-4 minutes until the kale is wilted.

  • 3.

    In a bowl, whisk the eggs and pour them into the skillet with the kale and tomatoes. Cook until the eggs are scrambled and fully cooked, about 3-5 minutes.

  • 4.

    While the egg mixture is cooking, toast the whole wheat tortillas lightly.

  • 5.

    Spread the mashed avocado evenly on each tortilla.

  • 6.

    Top with the scrambled egg mixture and sprinkle with nutritional yeast, salt, and pepper.

  • 7.

    Serve immediately and enjoy your healthy avocado toast!
