Instructions

  • 1.

    1. Start by boiling water in a pot. Once boiling, gently add the eggs and cook for 6-7 minutes for soft-boiled eggs. Remove and place in cold water to stop cooking.

  • 2.

    2. While the eggs are cooking, steam or sauté the asparagus in a pan with a little olive oil for about 5 minutes until tender. Season with salt and pepper.

  • 3.

    3. Toast the whole grain seed bread until golden brown.

  • 4.

    4. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

  • 5.

    5. Spread the mashed avocado on the toasted bread.

  • 6.

    6. Peel the eggs and slice them in half. Place on top of the avocado toast.

  • 7.

    7. Serve with a side of cottage cheese topped with almonds and the sautéed asparagus.
