Todays breakfast: two turkey sausage patties (Im trying various turkey sausages to try to get as close as possible to a pork taste and this one absolutely delivered!). Scrambled egg whites with lightly wilted arugula topped with a dash of reduced fat feta. Served with two slices of whole grain toast topped with minimal butter. Served with a giant side of Brocolli.

Instructions

    1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

    2. In a non-stick skillet, melt the butter over medium heat. Add the egg whites and scramble until fully cooked (about 3-4 minutes). Season with salt and pepper.

    3. In a separate bowl, mash the avocados and season with salt, pepper, and red pepper flakes if desired.

    4. On each slice of toast, spread a generous layer of mashed avocado.
