Instructions
1.
1. Start by toasting the whole grain or good seed bread until golden brown (about 3-4 minutes).

2. In a skillet, heat a small amount of olive oil over medium heat. Add diced onions and bell peppers, sautéing until soft (about 3-4 minutes).

3. Add cauliflower rice to the skillet and cook for another 2-3 minutes until heated through.

4. In a separate bowl, whisk together the eggs and egg whites. Pour into the skillet with the veggies, stirring gently until cooked through (about 3-4 minutes). Season with salt and pepper.

5. While the eggs are cooking, mash the avocados in a bowl and season with salt, pepper, and optional red pepper flakes.
6.
6. Spread the mashed avocado on the toasted bread, then top with the egg and veggie mixture.
