Instructions

  • 1.

    1. Start by boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in ice water.

    2. While the eggs are cooking, toast the whole grain bread until golden brown.

  • 3.

    3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

    4. Cook the turkey sausage according to package instructions until heated through.

  • 5.

    5. Slice the hard-boiled eggs and season with salt and pepper.

  • 6.

    6. Assemble the toast: spread the mashed avocado on each slice of toast, top with sliced eggs, and serve with turkey sausage and blueberries on the side.
