Instructions
1.
1. Toast the Ezekial bread slices until golden brown (about 3-5 minutes).

2. While the bread is toasting, whisk the egg whites in a bowl and season with salt and pepper.

3. Cook the egg whites in a non-stick skillet over medium heat, stirring gently until fully cooked (about 3-4 minutes).

4. Mash the avocado in a separate bowl and season with salt and pepper to taste.

5. Once the bread is toasted, spread a tablespoon of baba ganoush on each slice.

6. Top each slice with the mashed avocado, followed by the cooked egg whites and shredded low-fat cheddar cheese.
