Instructions

1. Toast the whole wheat bread slices until golden brown (about 3-5 minutes).

2. In a skillet, lightly spray with olive oil and heat over medium heat.

3. Add the crumbled tofu, spinach, nutritional yeast, turmeric, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the spinach is wilted and the tofu is heated through.

4. While the tofu is cooking, mash the avocados in a bowl and season with salt and pepper.

5. Once the toast is ready, spread a generous layer of mashed avocado on each slice.

6. Top with the vegan scrambled eggs and sprinkle with red pepper flakes if desired.
