Instructions
1.
1. Start by toasting the whole grain bread until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat a non-stick skillet over medium heat and add a little olive oil.

3. Crack the duck and guineafowl eggs into the skillet and cook to your desired doneness (about 3-4 minutes for sunny-side up).

4. In a bowl, mash the ripe avocados with a fork, adding salt and pepper to taste.

5. Spread the mashed avocado evenly on each slice of toasted bread.

6. Top each slice with a cooked egg, crumbled baby bella cheese, and a sprinkle of fresh herbs if desired.

7. Serve with sliced strawberries and blueberries on the side.
