Instructions

  • 1.

    1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. While the bread is toasting, heat a non-stick skillet over medium heat and add the spinach. Sauté for 2-3 minutes until wilted.

  • 3.

    3. Push the spinach to one side of the skillet and crack the eggs into the other side. Cook to your desired doneness (about 3-4 minutes for sunny-side up).

  • 4.

    4. Mash the avocados in a bowl and season with salt and pepper.

  • 5.

    5. Spread the mashed avocado evenly on each slice of toasted bread.

  • 6.

    6. Top each slice with sautéed spinach and a cooked egg.

  • 7.

    7. Drizzle with hot sauce to taste and serve immediately.
