Avocado toast for breakfast with an egg on one and bacon on the other! I love bacon but I know its pretty high in calories so I bought this at the store instead. Its just very thin precooked bacon and the calories arent too high. Berries on the side for fibre of course :) super delicious!

Instructions

  • 1.

    Toast the whole grain bread slices until golden brown (about 3-4 minutes).

    While the bread is toasting, cook the thin precooked bacon in a skillet over medium heat until crispy (about 3-4 minutes).

    In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up or over-easy, about 3-4 minutes).

  • 4.

    Mash the ripe avocados in a bowl and season with salt and pepper.

  • 5.

    Spread the mashed avocado evenly on each slice of toasted bread.

  • 6.

    Top two slices with the cooked eggs and the other two with crispy bacon.

  • 7.

    Serve with a side of sliced strawberries and blueberries for added fiber and antioxidants.
