Instructions

1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, bring a pot of water to a gentle simmer and poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny.

3. In a bowl, mash the ripe avocados with a fork, adding salt and pepper to taste.

4. Once the bread is toasted, spread a generous layer of mashed avocado on each slice.

5. Top each avocado toast with a poached egg and a few slices of smoked salmon.

6. Garnish with fresh herbs and serve with a side of mixed berries.
