Instructions

1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat olive oil in a non-stick skillet over medium heat.

3. Crack the eggs into the skillet, season with salt and pepper, and scramble until fully cooked (about 3-4 minutes).

4. In a bowl, mash the ripe avocados with a fork and season with salt and pepper.

5. Spread the mashed avocado evenly on each slice of toasted bread.

6. Top each slice with scrambled eggs.

7. Drizzle with hot sauce and add fresh spinach or arugula if desired.
