Instructions

1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, mash the ripe avocados in a bowl and season with salt and pepper.

3. In a non-stick skillet, cook the eggs to your preference (sunny-side up, scrambled, or poached) over medium heat (about 3-4 minutes).

4. Spread the mashed avocado evenly on each slice of toasted bread.

5. Top each slice with a cooked egg.

6. Add any optional toppings like cherry tomatoes, spinach, or red pepper flakes for extra flavor.
