Instructions

1. Toast the multi-grain bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

3. Heat a non-stick skillet over medium heat and scramble the eggs until fully cooked (about 3-4 minutes).

4. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt and pepper.

5. Spread the mashed avocado evenly over the toasted bread.

6. Top each slice with scrambled eggs.
