Instructions

1. Toast the sourdough bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat a non-stick skillet over medium heat and add the diced ham and bell peppers. Sauté for about 3-4 minutes until the peppers are tender.

3. In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the ham and peppers, stirring gently until the eggs are scrambled and cooked through (about 2-3 minutes).

4. Mash the avocados in a bowl and season with salt and pepper to taste.

5. Spread the mashed avocado evenly on each slice of toasted sourdough.

6. Top each slice with the scrambled egg mixture.
